Rich and pineapple-y - this chilli jam has a deep complex flavour perfectly balancing sweetness, smokiness and spiciness.

Salted Pineapple Chilli Jam was inspired by how Thai street vendors serve fresh fruit. When you're on the streets of Bangkok and in need of refreshment, just around any corner you can get fresh pieces of papaya, melon or pineapple with salt flakes and chilli powder. I've tried to replicate that delicious combination of salty, spicy, and tangy in this chilli jam.

## How is it made?

First, ripe pineapples are covered with smoked salt, then slow roasted for about an hour to caramelise. The salt unlocks natural sugars in the pineapple, which then caramelise and char creating a complex sweetness and smokiness. They're then blended with charred yellow peppers, my vinegar blend, and bird's eye chillies to create a delicious fruity chilli jam.

## Goes great with...

This one makes a great dip for East Asian food like spring rolls, tempura, or wontons. It's also great at a BBQ - a crowd pleasing fruitiness that will elevate any burger, hot dog or grilled meat.

Salted Pineapple Chilli Jam

## What's "mala"?

"Mala" is a Chinese word - 麻辣 - referring to the flavour you get when combining Sichuan pepper with spicy chillies. "Ma" 麻 means "numbing", and "La" 辣 means "spiciness". 

Sichuan pepper is a fragrant spice used a lot in China, but you might not have heard of it because it's very rare in UK-Chinese food. The takeaways and restaurants that were founded during the waves of immigration in the 50s-80s didn't have a lot of access to this unique spice. If you do come across it in a restaurant, you're probably at somewhere serving quite authentic recipes!

It's hard to describe the flavour of mala if you haven't tried it before. If you can imagine the sensation of a really minty toothpaste, but without any of the mint flavour, you're in the right area. It adds a unique extra dimension to rich and complex flavours like those in **Malamango Chilli Jam** - the juicy sweetness of ripe mangoes, the smokiness of charred yellow peppers, and the spiciness of the bird's eye chillies.

Heat tolerance is very individual! For the more sensitive palate, the tingly mala flavour bumps up the score rating very slightly compared to the other flavours of chilli jam.

## Goes well with...

It's absolutely **perfect** with a good curry, as an alternative to mango chutney. Dip your poppadoms, bhajis and samosas for an absolute treat. 

It's also a great roasting glaze, in particular for lamb. Try making a rub of salt, Chinese five-spice and Malamango Chilli Jam!

Malamango Chilli Jam

**New recipe for 2022!**

## How does it taste?

The goal with this jam was to take the flavour components of the Original recipe, and amp them up to 11. It's built around my favourite Korean ingredient gochujang (a fermented red pepper paste), transforming its unique flavour into this chilli jam.

The dark, delicious, complex, umami, and smoky flavour comes from the charred yellow peppers, gochujang, balsamic vinegar and smoked salt.

The sweetness comes from the gochugaru (Korean red pepper) flakes, the fruity scotch bonnets, and the raw cane sugar.

The spiciness is turned up with extra birds' eye chillies for a quick initial heat, gochujang for an earthy undertone, with scotch bonnets providing a longer simmering burn.

## How spicy is it?

**Scotchujang Chilli Jam** is a bit hotter than the rest of the range. Chilli fans would rate it 3/5. If you're into your spicy food, you'd probably rate this as a delicious everyday meal accompaniment: it won't burn your tongue off!

## Goes well with...

Probably too hot for your cheeseboard, instead have it in a sandwich or a cheese toastie. 

Absolutely slaps in a BBQ situation. Put it in a burger, or try glazing your meats just before putting them on the grill. Get that good char in.

Tangy, fiery and spicy, **Pink Ginger Chilli Jam** blends Japanese-style pickled ginger ( がり / "gari") with pink peppercorns and bird's eye chillies.

## What does it taste like?

Do you like ginger? Well, this is the jam for you! Tangy thinly-sliced ginger marinated for a month in a Japanese style sweet brine with beetroot, radish, and spices. The marination gave the ginger a soft pink hue, mellowed the sharp gingery edges, and created a deliciously warm glow. It tastes like coming home from a wet wintery walk, and kicking off your shoes in front of the fire.

## What does it go with?

- Spread straight on some warm toast or muffins
- Dolloped on a fruit salad, served with some cream
- Great with Christmas Pudding and brandy sauce or custard
- A delicious glaze for a roast ham
- Would it be blasphemous to suggest having it with sushi?

Pink Ginger Chilli Jam

Cane sugar,  がり/gari pickled ginger (ginger, water, rice vinegar, cane sugar, beetroot, radish, sea salt, pink peppercorns, black peppercorns), vinegar blend (malt, balsamic, cider), capsicum peppers, natural pectin, birds eye's chillies, cayenne chillies

Tangy Japanese-style pickled ginger (gari) blended with pink peppercorns and chillies

Made with both black and white garlic, Black Garlic Chilli Jam is a delicious umami accompaniment to anything cheesy.

## What's black garlic?

Black garlic is regular white garlic that's been aged in a warm, humid environment for several weeks. This process makes the garlic cloves shrink and turn black, developing a sweet and umami flavour - think balsamic vinegar, molasses, and dates. Wikipedia will tell you it originated in Korea, but [it's traditionally used in various parts of East Asia](https://www.black-garlic.org/where-does-black-garlic-come-from/) and its exact origin is unknown.

It's touted to have several health benefits. I can't comment on those, but what I can say is that it tastes absolutely delicious - especially when prepared as Black Garlic Chilli Jam :)

Black Garlic Chilli Jam

## How does it taste?

It's just like the Original recipe, but with extra wild garlic! It pairs really well with the smokiness and sweetness of the charred yellow peppers and the spiciness of the birds' eye chillies.

Through lots of experimentation, I developed a process to preserve the tangy flavours of the wild garlic leaves and add it to the chilli jam: first I make an extract from the leaves, and I add the extract at two separate times throughout the jam cooking process. This is because the longer you heat wild garlic, the sweeter and mellower it becomes, but if you leave it too long you lose the delicious pungent flavour!

## How does it taste?

The red kuri squash (aka onion squash, Hokkaido squash) has a really mellow and smooth flavour, like chestnuts. The cinnamon, cloves, ginger, nutmeg, and cane sugar give it an earthy sweetness, 

## So... it's not a pumpkin?

Ok, so technically this should be called Squash Spice, but I hope you'll forgive me for misleading you a little...! Pumpkins are a very similar kind of squash, so I don't feel too guilty about it.

## How spicy is it?

The ghost peppers (aka bhut jolokia) aren't initially too spooky, but they do sneak up on you. Pretty similar to actual ghosts. This is about the same heat level as Original, but the sensation and duration of the heat is longer.

- Straight on a crumpet. Or toast. But crumpets are better.

Christmas in a jar. The sultanas and raisins have been soaked in brandy for two weeks, along with flaked almonds and citrus rinds. These are combined with cane sugar, classic Christmas spices and warming ghost chillies for a delicious and unique festive flavour.

## Chunky or smooth?

A treat for the chunk fans - this jam has delicious and juicy whole sultanas and raisins, along with flaked almond pieces, and citrus rinds.

## Is it organic?

Most of the ingredients in this jam are organic (the sugar, chillies and spices are not). It's a long-term project of mine to switch to more organic and sustainably produced ingredients; it's a work in progress.
