Pa Lo wins Champion at Taste of the West

Pa Lo, our hot sauce inspired by a Thai dish of the same name, has won the top prize of Champion in the Sauces + Accompaniments category at Taste of the West 2025!

The sauce is made from scratch using our own shiitake mushroom extract, a custom five-spice blend, soy sauce, birds eye chillies, lime leaves, and a blend of palm and demerara sugars. It's a dipping sauce that's made for noodles, rice and stir fries, but also makes a delicious marinade for pork belly, steaks, and tofu.

Pa Lo is the first of a planned series of sauces showcasing lesser-known Thai flavours, the rest to be released throughout 2026 and beyond. The flavours of Pa Lo are also featured in two collaboration products with Radek's Chocolate - the Pa Lo Spice chocolate bar and hot chocolate. 

As well as the top award of Champion, Easton Chilli also won awards for two other products in this round of Taste of the West: Finalist for Fermented Sriracha Honey, and Gold for Scotch Bonnet & Gochujang Chilli Jam.
