Pa Lo is inspired by the Thai dish "moo pa lo", which roughly translates to "braised pork with five spice". The dish is basically a sweet soy sauce with a tonne of five spice, and it's typically served with pork belly, hard boiled eggs, and plain rice. Like a lot of Thai dishes it's about the balance of strong flavours!
This hot sauce version takes those strong flavour notes - sweet, salty, aniseed - and pairs them with birds eye chillies, rice vinegar and lime juice for a punchy medium heat sauce.
Great with: anything dippable, ricey or noodley
